Sourdough Secrets

The secrets to baking with sourdough were revealed at a program at the library.Outdoor photojournalist and sourdough baker Soc Clay of South Shore shared secrets from his new book, “Mad Trapper Sourdough Baking: On the Rise Since the 1800s” at the Main Branch on Thursday, July 19, at 5:30 p.m. He also demonstrated the simplicity of baking with sourdough.

Clay acquired his sourdough starter in 1980 from Sam Roberson, a trapper and bear guide from Alaska. It originated in 1912, he said. The “Mad Trapper” in the title of Clay’s book refers to Albert Johnson, a trapper and loner in the Canadian Northwest Territories in the 1930s who sparked one of the largest manhunts in Canadian history. According to Clay, it was the sourdough starter that kept the Canadian posse fed during much of the months-long manhunt.
